We love banana bread in our house, the kids love it most and I love it with a raspberry leaf tea as a treat. This beautiful recipe is easy, vegan and gluten-free. I would recommend eating it within a day or too.

Ingredients

  • 1 3/4 cups almond meal/flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 200ml coconut sugar
  • 1/3 cup coconut oil (melted)
  • 2 very ripe bananas
  • 1 teaspoon vanilla extract
  • 1 teaspoon apple cider vinegar
  • 100mls water
  • Dried fruit / walnuts /pecan nuts to decorate (optional)

Method

  1. Preheat oven to 170 degrees
  2. Line a loaf tin with baking paper
  3. Melt coconut oil (in the microwave is fine, just don’t heat too much, only melt)
  4. Mash bananas in a bowl
  5. Add coconut oil with the bananas and mix
  6. Add the sugar and vanilla, water, and vinegar, and mix until combined
  7. Add the almond flour, baking soda, baking powder, and salt and mix together.
  8. Spoon into tin
  9. Bake for 40-45mins (put a clean knife in the centre of the bread, if it comes out clean it is ready)
  10. Cool in tin for 30 minutes
  11. Decorate as you like

love + grace
