I recently made this cake for my Uncle Charlie’s birthday. He loves apple crumble. As part of my healing journey, a big focus is on using food to heal. Apples have so many health benefits so I thought this would be a great opportunity to make something that is healing, gluten-free and vegan. The kids loved it too. A great little recipe for a mid-week treat or birthday celebration.

Filling

  • 6 large apples; peeled, cored and chopped into cubes
  • 1 tsp raw organic honey 
  • 1/4 cup arrowroot powder
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger 
  • 1/4 tsp salt
  • 1 tbsp lemon juice
  • 2 tbsp water
  • 1 tsp vanilla extract

Topping

  • 1 cup almond meal
  • 1 cup gluten-free flour
  • 1 cup gluten-free rolled oats
  • 1/2 cup walnuts, roughly chopped
  • 1 tsp ground cinnamon
  • 1 tsp raw organic honey 
  • Pinch of salt
  • 1/2 cup + 2 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • 2 tbsp water

Method

  1. Preheat the over to 180c oven
  2. Line a cake tin with baking paper
  3. Combine all the filling ingredients
  4. Combine all the topping ingredients in a separate bowl
  5. Fill the tin with the filling ingredients
  6. Top with topping ingredients
  7. Bake for 45-50 minutes
  8. Allow to cook before removing
  9. For a cream or icecream alternative: blend 1x frozen banana, 1x banana and a cup of milk.
  10. Serve warm
