
We love banana bread in our house, the kids love it most and I love it with a raspberry leaf tea as a treat. This beautiful recipe is easy, vegan and gluten-free. I would recommend eating it within a day or too.
Ingredients
- 1 3/4 cups almond meal/flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 200ml coconut sugar
- 1/3 cup coconut oil (melted)
- 2 very ripe bananas
- 1 teaspoon vanilla extract
- 1 teaspoon apple cider vinegar
- 100mls water
- Dried fruit / walnuts /pecan nuts to decorate (optional)
Method
- Preheat oven to 170 degrees
- Line a loaf tin with baking paper
- Melt coconut oil (in the microwave is fine, just don’t heat too much, only melt)
- Mash bananas in a bowl
- Add coconut oil with the bananas and mix
- Add the sugar and vanilla, water, and vinegar, and mix until combined
- Add the almond flour, baking soda, baking powder, and salt and mix together.
- Spoon into tin
- Bake for 40-45mins (put a clean knife in the centre of the bread, if it comes out clean it is ready)
- Cool in tin for 30 minutes
- Decorate as you like
