
Carrot cake always reminds me of my mum. She loved it. I learnt to make a really yummy one when I was living in England and it became my speciality cake. Mum always wanted me to bake her a carrot cake for her birthday and mother’s day. So in honour of mother’s day, I have made her own with the kids today, which is another way I am keeping her memory alive. This one is that bit less dense than my original and is super healthy packed with all the right superfoods. It is vegan and organic and most importantly the kids love it! So a great way to get some healthy foods into them when they think they are having a treat!
Ingredients
2 cups carrots, grated
2/3 cup dates, chopped
1/2 cup walnuts, chopped
Handful walnuts for top of cake
2 tsp flaxseed & 6 tsp water
Dry:
3/4 cup spelt flour
1/2 cup almond meal
1/2 cup organic flaked coconut
2 tsp cinnamon
1/2 tsp ginger
1/4 tsp pink salt
1 tsp baking powder
1 tsp baking Soda
Wet:
1 tsp orange zest
1/2 tsp vanilla extract
1/3 cup organic coconut oil (melted)
1/4 cup maple syrup
1/4 cup almond milk
1/4 cup orange juice



Method
- Preheat oven 170
- Line a pan with baking paper
- Mix 2 tsp flaxseed & 6 tsp water And set aside to thicken
- In a bowl mix all dry ingredients
- In a separate bowl mix all wet ingredients
- Combine the wet and dry ingredients
- Then add carrots, walnuts, dates, flaxseeds altogether
- Pour into liner tray
- Bake for 35 minutes
