On the weekend you will find hubby in the kitchen making us all breakfast (and usually lunch and dinner too! He loves to cook and is good at it too!). We are on a wellness journey and as part of that we are using food to heal. Eggs used to be a big part of our life and especially weekend breakfast. For now, I am not having eggs due to heal (I will re-introduce them slowly down the track occasionally) so I wanted to create something yummy that hubby could whip up for us all to enjoy on the weekend. This is really easy and very nourishing. The kids love them. You can top with whatever you want. A healthy, healing and fun family recipe.


1 cup gluten free oats

1 large banana

1 tsp ground cinnamon

2-3 tbsp coconut oil (leave a bit to fry the pancakes in)

1 cup Almond/oat milk (or if you don’t want milk at all, you can blend 1x banana, 1x frozen banana, 1x cup of water to get a banana style milk – it is delicious)

To serve: (optional)

Raw organic honey

Bananas / Berries



  1. Blend all ingredients in a blender or food processor
  2. Heat some coconut oil in a fry pan
  3. Pour batter into pan (we make large ones but you can make little pikelets – you will get more out of the batter that way)
  4. Fry for approx 2-3 minutes (turn when you see bubbles forming
  5. Serve with whatever toppings you and your children love. We love bananas, walnuts drizzled with honey (or sometimes just vegemite 😉
