
I recently made this cake for my Uncle Charlie’s birthday. He loves apple crumble. As part of my healing journey, a big focus is on using food to heal. Apples have so many health benefits so I thought this would be a great opportunity to make something that is healing, gluten-free and vegan. The kids loved it too. A great little recipe for a mid-week treat or birthday celebration.
Filling
- 6 large apples; peeled, cored and chopped into cubes
- 1 tsp raw organic honey
- 1/4 cup arrowroot powder
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/4 tsp salt
- 1 tbsp lemon juice
- 2 tbsp water
- 1 tsp vanilla extract
Topping
- 1 cup almond meal
- 1 cup gluten-free flour
- 1 cup gluten-free rolled oats
- 1/2 cup walnuts, roughly chopped
- 1 tsp ground cinnamon
- 1 tsp raw organic honey
- Pinch of salt
- 1/2 cup + 2 tbsp coconut oil, melted
- 1 tsp vanilla extract
- 2 tbsp water
Method
- Preheat the over to 180c oven
- Line a cake tin with baking paper
- Combine all the filling ingredients
- Combine all the topping ingredients in a separate bowl
- Fill the tin with the filling ingredients
- Top with topping ingredients
- Bake for 45-50 minutes
- Allow to cook before removing
- For a cream or icecream alternative: blend 1x frozen banana, 1x banana and a cup of milk.
- Serve warm
